I have literally been searching for a cake recipe for an SCD cake recipe for years now, and how wasted pounds of coconut flour and cream in the process. Most cake recipes that turn out well either have loads of starches in them (no go), or eggs that are irreplaceable (also a no go). Well, I have FINALLY found the PERFECT recipe that is total fail proof and has no starches, easily replaceable eggs, and an amazing soft, cake-y texture.
Now if you've been following my blog for sometime, you know that I follow a mix between AIP and SCD, which basically means I eat fully AIP without the starches that are illegal on SCD. Woohoo! It's like a party over here. But honestly, this modification has held the results I have been searching for for ages, so I'm not complaining.
So the main part of the recipe I found off of this site , and since I didn't modify any of the main parts, I'll send you to her blog for the details. I did, however, use my own frosting recipe (may not look pretty, but it is delicious) and replaced the eggs with a gut friendly version. Let's get started!
Gelatin Egg Ingredients:
3 TBSP High Quality Gelatin
3 TBSP Boiling Water
1 TBSP Tepid Water
2 TBSP Lemon Juice
1/2 Cup Coconut Manna
2 TBSP Honey
Splash of Vanilla
Gelatin Eggs Directions: *this must all be done VERY quickly
Step #1: Pour all liquids into large mixing bowl.
Step #2: Place hand mixer to the side, ready to quickly mix once gelatin is in.
Step #3: Pour in gelatin and blend until frothy. Add to remaining cupcake mixture and blend.
Step #1: Place coconut manna in microwave for around 15-20 seconds.
Step #2: In a large mixing bowl, combine coconut manna, honey and vanilla. Mix until smooth (this does not pipe out very easily, but is delicious and best applied with a spoon).
Step #3: Spread on cupcakes and enjoy!
