If you're anything like me, you just realized the Super Bowl was today...yesterday. Sometimes I wonder what else I'm completely oblivious to. With this lack of awareness, I had NOTHING in mind for finger foods this evening. When I was eating all things gluten, dairy, and sugar, I would just run to the store and pick up a pack of frozen pizza bites, chips, and cookies, but those days are long over and it eating has become a little more involved.
During my scramble for ideas, I started thinking of what we use to eat and how I could change it. All things Mexican food has always been a giant hit in my house, so taquitos came to mind!
This recipe is super simple, easily modifiable based on what's available at your local store, and DELICIOUS! Let's try some Mexican that doesn't leave us with a bowling ball in our stomachs. Here we go!
-Organic Ground Turkey (1 Pound)
-Organic Spinach (1 Giant Hand-full)
-Organic Butternut Squash (preferably frozen) (1 Cup)
-Organic Baby Carrots (1/4 Cup)
-Organic Onion (1 Medium Size)
-Organic Full-Fat Coconut Cream (No additives) (1 16oz Can)
-Nutritional Yeast (3 TBSP)
-Organic Coconut Flour (1 TBSP)
-Himalayan Pink Salt (To Taste)
-Organic Ground Cinnamon (Around 1 TSP/To Taste)
-Organic Garlic Powder (Around 1 TSP/To Taste)
-Organic Ground Ginger (Around 1/2 TSP/To Taste)
-Organic Ground Turmeric (Around 1/2 TSP/To Taste)
-Avocado Oil (Enough to Sauté)
-1 Pack Coconut Wraps (I use these for SCD, but you can use Plantain Wraps, Siete Wraps, or any other wrap you like.
Step #1: Begin my steaming baby carrots and butternut squash until soft (microwave, InstantPot, etc.).
Step #2: While baby carrots and squash are steaming, pour enough avocado oil in the bottom of a skillet to sauté 1/2 onion. Sauté until translucent.
Step #3: Once wilted, add in baby carrots, butternut squash, coconut cream, around 1 tsp salt, coconut flour, and nutritional yeast.
Step #4: Pour mixture in a food processor and blend until completely smooth.
Step #5: Set aside and begin to sauté 1/2 onion. Once translucent, add in turkey and thoroughly cook.
Step #6: Add in spinach and sauté until wilted.
Step #7: Add in all spices including Himalayan Pink Salt to taste.
Step #8: Combine cheese sauce with turkey mixture and heat until warm.
Step #9: Preheat oven to 350 f. While preheating, lay out wraps and begin spooning mixture evenly onto one side of each wrap. Roll tightly into taquito shape (depending on the wrap you use, you may have to secure with a toothpick).
Step #10: Lay parchment paper on baking sheet, and place taquitos on parchment.
Step #11: Place in oven to cook until golden brown/slightly crunchy (or to your preference). *Time varies so differently for each wrap, so check frequently.
Step #12: Serve warm with extra cheese sauce, guacamole, or salsa. Enjoy!!
