Plantain Fries

The American diet highly consists of starchy, greasy, fried foods, and you're lying if you say this does nothing for you. We're served fries beside sandwiches, steaks, and even super healthy main dishes like salmon. Sad. In all honesty, it's not even the potato that is the horrible part for you. White potatoes have a lot of health benefits like vitamin C, B6, as well as being high in fiber and potassium to name a few. It's the fact that they throw them in an ocean of canola oil and often coat them with gluten and dairy containing ingredients. Did you know they put gluten in your fries?!!! Unnecessary. So you could potentially make homemade fries, bake them or skillet fry them with avocado oil and call it a day without feeling too bad. All of that being said, I am in no way saying homemade potato fries are unhealthy. If white potatoes don't give you any symptoms, then more power to you, and you're luckier than me. Homemade fries allll day. 

The point of this post is that they are not AIP, because...nightshades. Unfortunate. Sometimes it feels like everything is a nightshade. Basically the purpose behind nightshade avoidance is that when you have an autoimmune disease, you are easily susceptible to intolerances as well as your gut being more permeable. Things like lectins and saponins are huge culprits of this, and are also found in most nightshades. I don't want to spend too much time explaining the why's and how's on this post, but there are some great resources out there that I will link here!

 

So whether you are avoiding nightshades all together, or simply want another option besides potato fries, I have a solution!! PLANTAIN FRIES!!! If you have yet to notice, there is a blaring theme on my page surrounding plantains, but it's because I'm in love. Plantains are totally AIP, and have amazing health benefits like high fiber, vitamin A, boosting your immunity, aiding in digestion, and they have even been suggested to specifically help with Crohn's disease! Need I do more convincing? I don't think so. 

 

The best part of these fries is that they are literally 3 ingredients, and taste EXACTLY like regular french fries! Tested and confirmed by non-paleo/fast-food-fry-eating-friends. Oh, and by the way, if you're the person complaining that Walmart never has any plantains in stock..yeah..that's my fault. All you're going to need is:

 

Ingredients:

-1 Green Plantain (yellow will be sweet and sticky)

-Avocado Oil

-Himalayan Pink Salt

 

There is an oven version and a skillet version. The skillet definitely tastes most authentic, but both are great!

 

Skillet version:

Step #1: Cut off both ends of the plantain and create a slit from top to bottom. Peel plantain and cut into desired fry shape/thickness.

Step #2: Cover the bottom of your skillet with about 1/4 inch avocado oil and allow to heat on medium heat.

Step #3: Add your plantains and Himalayan pink salt to taste, and flip and fry until golden brown (takes around 10-15 minutes)

 

Oven version:

Step #1: Preheat oven to 425 f. Cut off both ends of the plantain and create a slit from top to bottom. Peel plantain and cut into desired fry shape/thickness.

Step #2: In a bowl, toss plantains with avocado oil until evenly coated. Add Himalayan pink salt.

Step #3: Place in oven until golden brown (around 25 minutes). **Tip: They get brown on the bottom first, so it's a good idea to flip half way through to ensure they are not burning.
