Cinnamon Banana Cereal (AIP)

So I know that a lot of my posts make me sound like I think every recipe is the best thing ever, and it's because I do; but this recipe is SERIOUSLY life-changing. Guys, when I went AIP, cereal seemed out the window. Gluten-free cereal was easy to find, but now it just seemed out of the question. Searching through Pinterest, I discovered just this week (one year later) that I didn't have to give up my first love since apparently AIP cereal is possible! I looked through some recipes, tweaked them to my preferences, and came up with this bad boy. Cinnamon. Banana. Cereal. You heard me! Let's get started.

 

 

Ingredients: 

-1 1/2 cups Unsweetened Coconut Flakes

-2 cups Unsweetened Banana Chips (cooked in coconut oil)

-1/4 cup honey

-1 teaspoon cinnamon

-1/4 cup coconut flour

-1/2 cup Himalayan pink salt

-2 tablespoons grass fed gelatin (I like this kind https://www.amazon.com/Great-Lakes-Certified-Pasture-Raised-Grass-Fed/dp/B01A1GDC34/ref=sr_1_2?ie=UTF8&qid=1498591169&sr=8-2-spons&keywords=great+lakes+gelatin&psc=1)

 

Directions:

Step #1: Preheat oven to 325

Step #2: In a food processor, combine coconut flakes and banana chips. Pulse until fine, flour like substance forms.

Step #3: Add the rest of the ingredients

Step #4: Combine in food processor

Step #5: On parchment paper, press out dough into a thin layer (up to preference)

Step #6: Bake for 10 minutes

Step #7: Remove from oven and either crumble, or cut into small squares

Step #8: Put back in oven for around 10 more minutes

Step #9: Place on cooling racks and enjoy with homemade nut milk!
