For the past week and a half, I have had laryngitis. No voice. Only mouthing words and typing. The average woman speaks 20,000 words a day. I'd estimate that I speak at least 30,000 a day. This has been traumatic to say the least and pure torture using non-verbal communication. Because of this unfortune, I have had plenty of time to experiment with new recipes. Most of which have focused around soups. That's when I discovered this delicious, creamy, savory soup that tastes like there's no way it could be AIP. Oh but it is. It is very AIP, easily made vegan, and 100% guaranteed to make your sickness (or every day life) much more fun. Okay, lets get to the ingredients:
-4 cups organic chicken broth (I use the "Imagine" organic free range low sodium for no tomatoes and less salt)
-5-6 slices organic/paleo turkey bacon (can use regular bacon. Omit for vegan)
-2 cloves garlic
-2 medium sweet potatoes
-1-2 bay leaves
-1/4 tsp dried thyme
-2 cups kale (chopped)
-1 cup full fat coconut milk
-salt to taste
-2 tablespoons coconut oil
-Step #1: Melt coconut oil and sautee onions until translucent and browning. Add garlic.
-Step #2: Add broth, sweet potato, bay leaf, and thyme. Bring to a boil and then place on medium/high heat and cover. Wait for sweet potatoes to soften.
-Step #3: Stir in kale and cook until wilted. Add in the coconut cream.
-Step #4: Add in bacon and salt to taste.
-Step #5: Serve hot. Enjoy!
