My entire life, I have had a caramel obsession. Caramel Frappuccinos, caramel ice cream, caramel candy, ANYTHING caramel, and I was all about it. Well, when I started realizing how disgusting the ingredients are that they use to make caramel, I knew I had to replace it in a healthy, real foods way.
What I love so much about this recipe is the S I M P L I C I T Y of it. No overnight soaking, no food processors, and a minimal ingredient list. Although I love baking, I'm the type that really prefers getting in and out of the kitchen ASAP. I'm way more about the eating than I am the process. So, with that in mind...let's get to the "how to"!
2 Cans Full Fat Coconut Cream
3/4 Cup Honey
1/4 Cup Coconut Oil
1/3 Cup Honey
1/2 Cup Coconut Flour
1 Egg (I use a flax egg)
1/2 tsp Baking Soda
Pinch of Himalayan Pink Salt
Step #1: In a saucepan, combine all ingredients for the caramel, and turn on high heat.
Step #2: Once a slight boil begins, turn down to a low/medium heat to simmer. Stir every 5-10 minutes until desired consistency (Mine takes around 1 hour) *Will get somewhat thicker once cooled)
Step #3: While caramel is thickening, preheat oven to 400 f, and line a rectangular baking pan with parchment paper.
Step #4: Combine all ingredients for cookie crust, and press into the sides of the baking pan. *I omit the egg and use 3 TBSP water + 1 TBSP flaxseed, and let thicken in the freezer for 10 minutes for a flax egg substitute. *I have never tried this specific recipe with a gelatin egg, but suspect that 1 gelatin egg may be substituted for AIP.
Step #5: Press into sides of baking pan, and place in the oven until golden brown (mine took around 20 minutes). Step #5: Remove from oven, and remove caramel from heat. Allow both to cool.
Step #6: Poor caramel over cookie crust and top with Himalayan pink salt.
Step #7: Place in fridge overnight, or place in freezer for 30 minutes for a quick shortcut. Cut into squares to serve.
There you have it! Delicious Salted Caramel Cookie Bars that are seriously going to satisfy your sweet cravings. These. are. SO. sweet!!
