I am just getting back into the swing of things after a much needed fall break filled with apple picking, lots of yummy baking, and the sleep I've been needing for a long long time. Usually I'm the type of person to choose smoothie bowls or juices for breakfast, but fall and winter weather always gets me in the warm, sweet, cinnamon-y mood. Thus, this creation came about. I don't know about you, but traveling (even on planes) always messes with my digestion. I cooked for myself the entire trip and ate nothing out of the ordinary, so I can only sum it up to the change in schedule and actual travel time itself. Since it's been a few days since I've gotten home, everything is back on track to how it usually is. This recipe actually played a huge role in that and I can't wait to show you how!
These pumpkin spice waffles are not only AIP, but there are extra gut-healing ingredients added in for the sole purpose of improving gut health! Best of all, these are easily frozen and re-heated for quick, toaster waffles on hand for whenever you're running short on time (or just aren't in the baking mood). Let's get into the recipe!
-2 green plantains
-1/2 teaspoon baking soda
-1 1/2 teaspoon pumpkin spice
-1 teaspoon apple cider vinegar (with the mother)
-2 1/2 tablespoons melted coconut oil
-1 teaspoon vanilla
-1/4 teaspoon Himalayan pink salt
-2 tablespoons collagen peptides (I use Great Lakes **this is the SUPER gut-healing ingredient)
-Non-stick spray (I use sprayable avocado oil)
-100% pure organic maple syrup
-Organic berries and bananas
-Cinnamon to sprinkle
-**I haven't tried it, but pecan butter sounds amazing on these!
-Step #1: Preheat waffle maker
-Step #2: Combine all ingredients in a food processor (no need to separate wet and dry). Blend until smooth batter is formed)
-Step #3: Spray waffle maker with non-stick spray of choice. Place around 1/4 cup of batter and cook until finished (my waffle maker takes around 5 minutes, but I usually do around 8 for extra crispy)
-Step #4: Remove from waffle iron. Plate and top how you wish.
