Evolution of Madi's Life: Year 0-16: Everything Pizza with Extra Cheese from Pizza Hut. Year 17-18: Gluten Free Everything Pizza with Extra Extra Cheese. Year 19-20 Gluten Free Everything Pizza with NO Cheese (now we're getting somewhere. Year 21: Disgusting Vegan Cauliflower Pizza's with weird nightshade free crusts that made me want to fall asleep and never wake up again. Year 22: Plantain Crust Hawaiian Pizza's that made me real bloated, but were delicious. Year 23: SCD/AIP Coconut Flour Pizza Crust that leaves me non-crampy, feeling light, and super satisfied. Also can be summed up with "I see The Light" from the Tangled Soundtrack.
So, that was a lot to take in for all of us, but I'm pretty sure it's many more people than just me alone with similar stories. I have been pizza obsessed my entire life, and wanted it for basically every meal and snack possible. Literally, replace this meme with "pizza", and that pretty much summed me up.
When I had to start transitioning to a grain-free, egg-free version, I went through every single option possible, and most of them were mistakes. It was truly a tragic few years and something I work to forget every single day. But, we are finally out of the woods and into true freedom again. Pizza freedom that is. So if you have an issue with grains, eggs, starches, nightshades, and basically every other pizza ingredient, let me help you out. I've got this.
*Yields around 8 normal size slices*
-3/4 Cup +6 TBSP Coconut Flour
-3/4 Cup Avocado Oil
-3 Heaping tsp Baking Soda
-1-2 TBSP Italian Seasoning
-2 TSP Garlic Powder
-2 tsp Himalayan Pink Salt
-1 TBSP Honey
-9 TBSP Gelatin *this is a great high quality one
-9 TBSP Boiling Water
-6 TBSP Lemon Juice
-3 TBSP Tepid Water
Dip for Crust:
-1/4 Cup Avocado Oil
-1 tsp Himalayan Pink Salt
-1-2 tsp Minced Garlic (powdered works fine too)
Step #1: Preheat oven to 325 f and cover baking sheet with parchment paper
Step #2: Place all ingredients for crust except for gelatin eggs in a large mixing bowl and set aside.
Step #3: Mix all liquids for gelatin egg and have gelatin and electric mixer set aside ready to quickly mix. Once ready, combine gelatin with liquid and mix until frothy (this all must be done very quickly.) Immediately add to ingredients in step #2 and mix all together.
Step #4: Scoop out dough onto prepared parchment paper lined baking pan and begin forming into a crust shape. Wet hands and press until pizza is around 1/2 inch thick (you can also pinch the side to make a defined crust).
Step #5: Place in the oven for aprox. 15-20 minutes, or until crust is beginning to look golden brown.
Step #6: Add toppings and place in oven until ingredients are warmed.
***I used a vegan cheese sauce as my base. RECIPE COMING SOON! Until then...this one is great for a nightshade free pasta sauce
