Peppermint Hot Chocolate (Paleo/and AIP compliant)

I look forward to Thanksgiving for a lot of reasons, but one of the main reasons I'm so excited is because of Thanksgiving night...BLACK FRIDAY!! WOOHOOH! For some people, this is an extremely stressful event that they'd rather do online behind their computer screens, but for me, it's a must-do..a tradition even. And with this tradition comes many other traditions that come along with it, including the one night a year I would splurge on peppermint mocha's or peppermint hot chocolates from Starbucks. To make myself feel a little better about this decision, I would get the "light" version with soy milk so that instead of refined white sugar, I was drinking Splenda. What a great alternative! Oh how times have changed.

I've tried to remake hot chocolate with almond milk and water, but they never tasted like the real deal. Finally, upon my new found coconut cream obsession (literally going through a couple of cans a day), I had the brilliant idea to try to make peppermint hot chocolate with the coconut cream for a creamy, fatty,'s INCREDIBLE! Even indistinguishable to the Starbucks version if I might add.

The great thing about this recipe is it is super minimal and simple, making it a quick snack that can be whipped up in less than five minutes. Oh, and I know I say this about everything, but for an extra tummy healing trick, add collagen! You'll never know it's there. Let's get into the ingredients:

*Yields around 3 cups (the mugs in this picture were 1 1/2 batches


-2 Cans Full Fat Coconut Cream (13.5 ounces. I get the version for a no emulsifiers version)

-3 TBSP Raw Cacao Powder (sub for carob for AIP)

-3 TBSP Maple Syrup

-2 tsp Peppermint Extract


Step #1: In a saucepan, combine all ingredients and stir until completely smooth and up to desired temperature.

Step #2: Pour into a Starbucks cup and take to your local mall for a night of Black Friday shopping. Enjoy!
