Ever tried cauliflower pizza crust? Don't. Going AIP sent me on a hopeless search through dozens of pizza crust recipes searching for something that tasted even remotely like real pizza that you didn't have to eat with a fork; all the while weeding through crusts packed with yucca, cassava, eggs, or tapioca. Pizza was always the one food I felt left out from when everyone else was eating. It's such a social food and most recipe "replica's" tasted like I was scooping up baked veggies with some weird avocado sauce. Well, those days are behind me and now they are for you too!
This is a pizza I could confidently take to a gathering of my junk-food eating friends and know that they would enjoy it too. And it's based off my favorite, most used food in the world (I need help)... Plantains!!! Let's get started!
-3 Green Plantains
-1 Cup Water
-2 Tablespoons Olive Oil
-1 Tablespoon Coconut Oil.
-1/3 Cup Coconut Flour (start here and work your way up)
-1 1/2 Tablespoons Dried Oregano
-1 Teaspoon Himalayan Pink Salt
-1/2 Teaspoon Garlic Powder
Toppings I used
-AIP BBQ Sauce (recipe coming soon!!!)
-Organic Kalamata Olives
-(I didn't use meat, but crockpot chicken would be really good)
-Step #1: Preheat oven to 450.
-Step #2: Slice and peel plantains. Slice into small pieces. Melt coconut oil in skillet and pan fry plantains until able to pierce with a fork.
-Step #3: Add plantains to food processor and process until a dough forms.
-Step #4: Add in water and olive oil. Process together.
-Step #5: Add in coconut flour, oregano, Himalayan pink salt, and garlic powder. Process until a thick dough forms similar to the consistency of a flour based pizza dough (add more coconut flour as needed)
-Step #6: Lay out a pizza pan with parchment paper. With wet hands, press out dough until around 1/2 to 3/4 inch thick.
-Step #7: Place in oven for around 20 minutes or until crust begins to take on a golden brown color.
-Step #8: Prepare toppings and BBQ sauce.
-Step #9: Remove crust from oven and cover with sauce and toppings.
-Step #10: Place back in the oven for an additional 15-20 minutes (or until toppings begin to brown, or soften)
-Step #11: Remove, let cool, enjoy, and be social! (I dip the crust in my favorite AIP ranch dressing. Recipe to come soon!)
