As promised, today I bring you my fried chicken strip recipe!! Guys..I literally have NO idea how I've gone this long grain-free and NOT have thought of making chicken strips. This is such a game-changer and is bringing me back to half my childhood (the other half was pizza bites).
A major perk of these is that they are not only fully AIP, but totally SCD as well, which can be summed up in two words...NO BLOATING! Something I didn't even realize was a possibility only 1 month ago.
I will stall no longer. LET'S GET TO IT!
-Himalayan Pink Salt
-Organic Chicken Thighs
**I did not provide measurements because every ingredient is dependent upon how much chicken you have. I eyeballed everything and there's no real chance of messing it up since you can always add more.
-1/4 Cup Dijon (still not totally sure if this is SCD but it doesn't bother me. *This is a reintroduction on AIP*)
-1/4 Cup Honey
Step #1: Fill 3 separate bowls with avocado oil, coconut flakes, and coconut flour (mix in salt and garlic powder) for dipping. Lay out skillet on stovetop.
Step #2: Cut chicken into small strips (around 1 inch wide)
Step #3: Fill skillet with around 1 1/2 inches of avocado oil and heat on medium high. This should cover half way up the chicken strips.
Step #4: Begin my dipping chicken strips in coconut flour mixture and massage to thoroughly cover and aid in sticking.
Step #5: Fully emerge in bowl of avocado oil.
Step #6: Finish by dipping and pressing coconut flakes onto strips.
Step #7: Place in skillet and flip until no longer pink on the inside and crispy on the outside. Repeat steps 4-7 for remaining chicken strips.
***There will be burned coconut flakes after each batch (if you do more than one). Be sure to empty this out and re-pour avocado oil for each batch.
Step #8: Hand mix dijon and honey and set to side for dipping.
Step #9: Lay chicken strips on paper towel and serve immediately. Enjoy!
***I make enough to have extra to take to school and they are still good warmed up!
