Bacon Wrapped Brussels Sprouts with a Maple Dijon Glaze (AIP - Paleo)

Probably the most elaborate dish name for me to date, but I promise, it’s so simple! New Years Eve has always been a big deal in our house. We make tons of appetizers, watch Home Alone or Back To The Future (Still not sure why), and watch the ball drop in Time Square. It's a blast. Throughout the years, these appetizers have consisted of pizza bites, sherbert Sprite punch, summer sausage with cheese and crackers, taquitos, wings, chips, and the list goes on.

As I've been trying to come up with appetizers for our (semi)-new found lifestyle, I wanted something nutritious and protein rich. I also wanted something semi-sweet and easily served. This just happened to turn out to be the perfect combination and something that can be made in under 25 minutes! Let's get into it!


-Paleo Compliant Bacon or Turkey Bacon (amount depends on amount of brussels sprouts)

-Brussels Sprouts (I got organic frozen brussels sprouts and steamed them prior to cooking in the oven) (amount up to preference)

-Date Sugar (could probably sub for coconut sugar) (enough to roll preferred amount of bacon)

-2 TBSP 100% Pure Maple Syrup (continue doubling until preferred amount reached)

-1 1/2 tsp Dijon Mustard (continue doubling until preferred amount reached)

-Coconut Oil (Around 2 TBSP or enough to submerge bacon in)

-Tooth Picks


Step #1: Preheat oven to 425 f. Line baking sheet with parchment paper.

Step #2: Steam brussels sprouts or precook so they are easily pierced. Place on parchment lined baking sheet.

Step #3: Cut bacon in half vertically and horizontally. Melt coconut oil in microwave. In the meantime, sprinkle date sugar to cover the bottom of a plate.

Step #4: Fully immerse bacon slices in coconut oil, roll in date sugar, and wrap around brussels. Secure with toothpick.

Step #5: Place in oven to cook until crispy (took mine around 20 minutes).

Step #6: In the meantime, mix maple and dijon until smooth (make extra if you'd like enough for dipping)

Step #7: Remove from oven and pour maple dijon glaze over all brussels sprouts. Serve with glaze dip on side. Enjoy!
