2 Ingredient Caramel Dip (SCD, AIP, Vegan, Paleo)

Growing up, it was no secret that I was sugar crazy. Anything sweet was my go-to, but I totally zero'd in on caramel. Caramel Frappuccinos, Twix, really anything with caramel was guaranteed to be my favorite. Once I got older and looked at an ingredient label for the first time, I was so confused. Let me just show you the Hershey's Caramel Sauce ingredients for reference: Corn Syrup; High Fructose Corn Syrup; Sweetened Condensed Skim Milk (Skim Milkand Sugar); Water; contains 2% or less of: Disodium Phosphate; Sodium Citrate; Salt; Artificial Flavor; Caramel Color; Xanthan Gum; Artificial Color (Yellow 6; Yellow 5). Why does caramel need artificial flavoring, artificial colors, and to be honest...anything else on this list?

So, I took matters into my own hands and decided to experiment with clean caramel recipes. After a couple of subpar caramel sauces, I began to realize...caramel needs like, 2 ingredients! So, I made a 2 ingredient caramel recipe that is so easy, I probably shouldn't even make it an actual full post. Nonetheless, I made it an actual full post, because it's JUST. THAT. GOOD. This tastes like actual, gooey, thick, caramel that you could pour on your *nicecream*, dip your apples in, or just drink if that's your stye. Okay, let's get into it!


-1 Can Full Fat Coconut Cream (around 13 oz. I LOVE this brand, because there are NO added fillers. It's literally organic coconut and water.)

-1/2 Cup Honey


Step #1: Add in both ingredients to sauce pan and bring to boil.

Step #2: Reduce to simmer (low-medium heat) and leave uncovered. Stir occasionally for the next 45 min-1 hour, or until gooey enough to stick to the back of a spoon).

That is ALL, and it is so so good. I love keeping some stocked in my fridge at all times for whenever I want to add a little extra sweetness to my snack. With ingredients like these, I never have to feel like I'm compromising my health when I'm satisfying a craving, which means, I also don't have to limit myself! Coconut cream is high in healthy fat which are bodies NEED, and honey is rich in antioxidants and full of health benefits.
