I've always been a pie over cake person, but pie crust is pretty difficult to make free of grains, nuts, dairy, and eggs (I is cake, but that's beside the point). Well, over the years of eating this way, I've discovered a recipe that makes a great pie crust to compliment any filling. I've used this for both apple and pumpkin pies, and they have turned out delicious!

Today, I'm going to share my Mini Apple Pie recipe t...

These gingerbread men are SO SATISFYING! Seriously, the perfect amount of sweetness, nut free, and no crazy starchy flours that give me cramps for days. Also, revamped it to be AIP, (almost) SCD, and can be vegan! WHAT.

I love the simplicity and genuininess of these ingredients. They make my body feel great, and I can eat 1,000 without feeling bad. Okay, let's get into the recipe!

-1/2 Cup Coconut Oil (room temp)

My entire life, I have had a caramel obsession. Caramel Frappuccinos, caramel ice cream, caramel candy, ANYTHING caramel, and I was all about it. Well, when I started realizing how disgusting the ingredients are that they use to make caramel, I knew I had to replace it in a healthy, real foods way.

What I love so much about this recipe is the S I M P L I C I T Y of it. No overnight soaking, no food processors, and a minimal in...

Pop-Tarts are kind of a genius least for someone like me with a constant sweet tooth, a love for all things bready, and always feeling like there's not enough time in the day. The marketing really pulls you in, until you realize that they are full of artificial dyes, TBHQ, and high fructose corn syrup. Well, I guess until you start caring that they are full of all of this..back then...I didn't really care. Knowledge...

It's pumpkin season!!!!!!! Pumpkin Pie, pumpkin scents, pumpkin picking, pumpkin carving, pumpkin, pumpkin, PUMPKIN! It is that time of year, and I am so on board. Years back (before I knew how food affected my body), Dairy Queen's Pumpkin Pie Blizzard was basically what I lived for all year long. It was this thick, creamy, overly/artificially flavored cup of Ice Cream that tasted like..well..pumpkin pie! I probably averaged l...

Although I follow an SCD-based diet, I like to keep my meat to a maximum of two meals per day. I almost always prefer these meals to be lunch and dinner, which means that breakfast can become pretty limiting without some major creativity. Luckily, my creativity is soaring these days (or more like my desperation to switch things up), and I'm all about experimenting with new recipes!

Throwing it back to my not-so-healthy-eating-...

Summer is quickly coming to an end, and with each passing day, fall seems to slip into the air just a little bit more. I use to hold on to every scrap of summer I could, because I knew fall=school. But these days, as an official graduate/semi-functioning adult, summer really means nothing to me if we are going to be totally honest. Most of my vacations are in fall/winter, my abilities to build a strong tan have fallen off of t...

Growing up, it was no secret that I was sugar crazy. Anything sweet was my go-to, but I totally zero'd in on caramel. Caramel Frappuccinos, Twix, really anything with caramel was guaranteed to be my favorite. Once I got older and looked at an ingredient label for the first time, I was so confused. Let me just show you the Hershey's Caramel Sauce ingredients for reference: Corn Syrup; High Fructose Corn Syrup; Sweetened Condens...

So this is round 2, I realize that. But after experimenting with the recipe a little and making some changes that I find to be extremely noteworthy, I give you....VANILLA CUPCAKES PART 2!!! Yes, still totally AIP and SCD, BUT lighter, fluffier, and more crave-worthy. The differences are small, but they make a HUGE difference.

Okay, let's get started.

*Yields around 12 medium/large cupcakes

Peach Cobbler, Chicken & Dumplings, Biscuits & Gravy, all of those seem to go hand-in-hand to me and are a huge part of what made up my childhood. When I first decided to jump on the health train, I thought all of this was in the past...nope! All of these things are still extremely relevant, and honestly..even BETTER! Why? Because you can eat as much as you want and never ever EVER have to stop. My least.
